Today I had a super intense leg day and was too tired to go grocery shopping so this is what I what I whipped up in about 10 minutes!
And honestly, even though it was super improvised I will definitely be making this again!
I should preface this by saying I was going for a chorizo and rice sort of dish but since I didnt have my favorite vegan chorizo from Trader Joe’s (seriously try it it’s so packed with smoky spiciness and it’s $2.99 and has like 8 servings!!!) I made my own!
Start by mixing your dry spices together in a bowl. The black salt really adds some umami flavor but if you dont have this, nutritional yeast and regular salt will do the job! Once they are combined add lemon juice, grated garlic (or garlic powder if raw garlic is too strong) and a teaspoon of water. Keep mixing and adding teaspoons of water until you have a paste the consistency of oil.
In a separate bowl mash your chickpeas with a fork until they are a chunky texture. This doesnt have to be perfect, it is all going to be mixed together anyway! Pour the mashed chickpeas into the spice paste and combine.
In a food processor or blender, break up 1/2 a head of cauliflower and pulse in very short bursts for about 30 seconds until it looks like rice!
Then break up your tofu (I used the sprouted firm tofu from Trader Joe’s) and combine the tofu and cauliflower rice with the chickpeas and mix until the paste covers everything.
You can stop here, add some hot sauce and call it a day, but I was suuuper hungry so I added some steamed sweet potatoes and green peppers! And for toppings I added hummus and Green Tomatillo Salsa from Trader Joe’s.
I also made some celery, apple and carrot juice which is my go to green (ish) juice! So salty and sweet and goood I could drink it all day. If you dont have a juicer, you could just blend everything and strain it!
And that’s it! A super quick, plant based dinner (or lunch!). Being vegan is so incredibly easy and delicious while being super healthy at the same time, it astounds me!
Cauliflower (1/2 head)
Firm Tofu (1/2)
Chickpeas (1/2 can)
3 small Sweet potatoes
1 green pepper
chipotle powder (1 tsp)
smoked paprika (1/2 tsp)
Lemon juice (2 tsp or to taste)
Black salt (1 tbsp or to taste)
Garlic clove (grated 1/2)
Nutritional Yeast (1 tbsp)
pinch of black pepper
